   When the 12 year old Giannis Varlamis was living his village, Palaiokastro Fthiotidas, seeking his fate in Lamia at a very young age, it possibly never occurred to him that he would plant the first seed, which would grow into something so wonderful, something so unique, something that has already lasted for 52 years and has led to the well-known business PINAKOTI, our PINAKOTI

   The patriarch of family tradition, Giannis Varlamis, initially worked in bakeries in Lamia and soon not only came to love the art of baking, but his talent is what made him stand out from the rest. At the age of 33 with experience in the field of baking, he came to own a traditional bakery in Eslin Street next to the famous Mouzeli Mills, which he ran for 32 consecutive years until his retirement.

  At the bakery in Eslin Street, the unique talent of the family stood out, the son of Mr. Giannis, Ilias. Having worked from a very young age side by side with his parents, he not only learned the art of baking, but also added his own personal touch. He added many new products to his parents selection, not only wanting to continue his parents’ legacy but to pioneer in the industry. Which is exactly what he achieved.

The small bakery in Eslin Street was not big enough to hold the ambitions of the new generation. Ilias Varlamis founded his bakery in a more central part of the town. Together with his wife, Elena Sxiza, they ran their first bakery business, in Botsari Street, in 1993. The town of Lamia immediately supported the initiative of the young couple and made the bakery on Botsari Street the place, where one could find the best homemade bakery goods.

   The next step expanded the business: in 1996 Ilias and Elena opened their first business named PINAKOTI, in the center of Lamia, in Leosthenous Street. From that moment, Pinakoti is a benchmark in Lamia, but also for the entire prefecture of Fthiotida. In 1998 another bakery was added to the chain of Pinakoti bakeries, in the southern part of town in Vasilikon Street. The course of the business continued in 2000 with a third bakery in Stylida and a fourth in 2001, in Ypsilanti Street.

  The year 2003 sees Ilias Varlamis taking his next big step, with even bigger business ventures: the individual bakeries and production units unite and move to the industrial area of Lamia, to the proprietary facilities of the business. The production unit of bread and bakery products has been running since then fulfilling all necessary quality and health requirements of orders, since sales have now expanded to a large network all over Greece. In fact, it is one of the first production units of the area if not the first, which since 2006 is fully dedicated to the implementation of guidelines not only for Greece, but also for the European Union.

  In 2016 Ilias Varlamis urged by his eldest daughter Maro, added one more bakery to the chain “Pinakoti”. The wood fire oven bakery, which is in Galaneika (the northern suburbs of Lamia) in Papasiopoulou Street and bakes bread in its traditional wood oven. This new business venture was the seed of Maro Varlamis’ insightfulness, who simultaneously whilst studying, planned, prepared and supervised the creation of the wood oven bakery and has since undertaken its management. Furthermore, being the new blood in the business she has already extended her activities to other markets (Athens, Volos, Paros, Mykonos…).

   The success of PINAKOTI and its constant presence at the top of the population of Lamia, but not just Lamia’s preference does not have any secrets, it is based on obvious truths: pure ingredients, homemade recipes and the passion of the founder Ilias Varlamis who is both the soul of the production and also the employees of the business.
